For burnt cheesecakes, one of it's main features is that it is baked at a high temperature for a relatively short period of time such that the top and edges are cooked (even burnt, hence the name) while the center remains molten and under-cooked. When the cake is kept chilled in the fridge, the molten center sets and hardens a little making it easier to cut into presentable slices. However, as the cake slowly warms up to room temperature, the center turns back to it's molten state.
BEST CONSUMED: Chilled or at room temperature
Store tightly wrapped in freezer for up to 2 mths, covered in fridge for up to 5 days or at room temperature for up to 3hrs.
